Roasted Vegetables with Argan Oil

 

Ingredients:

  • 2 cups mixed vegetables (e.g. carrots, zucchini, bell peppers, red onion)
  • 2 tbsp culinary argan oil
  • 1 tsp cumin or smoked paprika (optional)
  • Salt and pepper to taste
  • Fresh herbs (parsley or cilantro) for garnish

Instructions:

  1. Preheat oven to 400°F (200°C).
  2. Toss vegetables with 1 tbsp argan oil, spices, salt, and pepper.
  3. Roast on a baking sheet for 25–30 minutes, until golden and tender.
  4. Finish with the remaining 1 tbsp of argan oil and fresh herbs before serving.

Variations:

  • Add a splash of lemon juice for brightness.
  • Serve over couscous or with grilled halloumi for a complete meal.
