Seared scallops with Argan oil & citrus infusion

This dish balances the delicate sweetness of seared scallops with the nutty depth of culinary argan oil and the brightness of a citrus infusion. It’s a simple yet elegant recipe, perfect for impressing guests or enjoying a refined meal at home.
Ingredients (Serves 2-4) :
For the Scallops
- 8 large sea scallops (dry-packed, fresh)
- 1 tbsp olive oil
- 1 tbsp butter
- Salt and freshly ground black pepper (to taste)
For the Argan Oil & Citrus Infusion
- 2 tbsp culinary argan oil
- Zest of 1 orange
- Zest of ½ lemon
- 1 tbsp freshly squeezed orange juice
- 1 tsp freshly squeezed lemon juice
- ½ tsp honey
- Pinch of sea salt
For Garnish
- Microgreens or fresh herbs (e.g., chervil, basil, or cilantro)
- Orange and lemon zest curls
Instructions:
1. Prepare the Citrus Infusion
- In a small bowl, whisk together argan oil, orange zest, lemon zest, orange juice, lemon juice, honey, and a pinch of sea salt.
- Let it sit for at least 10 minutes to allow the flavors to meld.
2. Sear the Scallops
- Pat the scallops very dry with a paper towel. Season with salt and pepper.
- Heat olive oil in a skillet over high heat until shimmering.
- Add the scallops and sear for 1½-2 minutes per side, until golden brown with a crust. Add butter to the pan in the last 30 seconds, basting the scallops for extra flavor.
- Remove from heat and let them rest for 1 minute.
3. Assemble & Serve
- Arrange the scallops on a plate.
- Spoon the argan oil & citrus infusion over the top.
- Garnish with microgreens and fresh citrus zest curls.
